  1. Warm the oil in a large pan over medium heat and add the onion, garlic, and salt. Sautee until soft, about 4 minutes.
  2. Steam the potato cubes until just barely fork tender.
  3. Add the sweet potato, cauliflower, and lime zest, and cook about 10 minutes more, continuing to stir occasionally.
  4. Add the tomatoes, black beans, kidney beans, jalapeño, lime juice, cumin, chili powder, and cocoa, bring to a simmer, cover, and cook for 10 minutes. Taste and adjust seasonings.
  5. Remove from heat and serve with condiments such as: Tortilla chips, Vegan cheese shreds, Vegan sour cream, Chopped green onion, Chopped jalapeño, Chopped cilantro, & Lime wedges
