Buffalo Wing Sauce:

  • 1 full bottle of your favorite BBQ sauce
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ¼ cup of vegan margarine

Whisk this all together over low heat and margarine has melted and the sauce reduces to a thick dark gooey/sticky sauce. Then remove from heat.

Once sauce is made and boiled seitan has cooled, you will need to make a batter for the seitan to be fried in.

Buffalo wing coating batter:

Mix together in a bowl:

  • 1 cup of flour
  • 1 tsp ground pepper
  • ½ tsp cajun spice or cayenne pepper
  • 1 tsp. smoked paprika

Remove seitan pieces from pot and let it drain off a bit in a colander. Roll seitan into batter until well coated.

On your stove top, place a frying pan 3 quarters of the way full with canola oil over medium/high heat. Do a “fry-test” (whether that be a small piece of dough or whatever you do to see if the oil is hot enough to fry stuff in) to see when the oil is hot enough.

Very carefully place a few pieces of battered seitan into hot oil for frying. Let small batched of seitan fry for about 7 minutes per batch. Then scoop out of the hot oil with a slotted spoon and towel it off on some paper towel to remove excess grease.

Once all of your seitan is good and fried, smoother them in the Buffalo Wing Sauce.

    1. Combine all dry ingredients and wet ingredients separate then mix them together. This will create a wet dough ball. Knead the dough ball for a few minutes.
    2. In a large pot bring 8 cups of water to a rolling boil on the stove. You will need to turn down the heat once the seitan pieces are ready to be placed in the pot.
    3. With a clean pair of kitchen scissors, cut wet dough ball into very small half inch pieces. Once the ball is cut into many tiny pieces, carefully and slowly introduce them into the boil pot of water. Let the seitan boil for 1 hour. The small pieces will triple their size. Leave the lid off the pot.
    4. Once an hour has passed, let the seitan cool for about 20 minutes. While you wait you can make your buffalo wing sauce and seitan batter.
